HONOR THE CHEF

Honor the Chef and Briskette & Birdie is a newly reopened restaurant at the intersection of Routes 22 & 295. Honor Harvey, the new owner, brings years of experience as a sought-after chef in Manhattan, El Paso, and California. Like many transplants, Honor was drawn to the Berkshires by its beauty and mystique. Transformation is an understatement for the reopened restaurant with real parking spaces, tubs being filled with flowers, a new building for placing orders and selecting beverages, and an enhanced picnic area. Suppliers for its burgers include Our Daily Bread in Chatham and Grass-fed Joyce Farm Beef, while its salad dressings and vinaigrettes are made in house with quality olive oils. You might delight with their Italian flour cookies, an assortment of beverages, or fired pizzas with house made 3-day fermented sourdough crust with Caputo Italian flour. Fresh cut French fries are fried in beef tallow and salted.
